Executive Chef at The Wayback Hotel - Paloma Restaurant - Pigeon Forge (Personal Services)

The new kids in town at The Wayback Hotel are searching for a culinary leader for our anticipated restaurant outlets Paloma and Paloma Swim Club. Paloma aims to create a playful atmosphere for guests by all measures, from food, to dcor, and service. Paloma at The Wayback performs a modern rendition of the taqueria with south-of-the-border ingredients prepared using modern-American technique.
We are looking for an Executive Chef to join our team and provide support for our culinary staff alongside our restaurant management team. The successful candidate will be responsible for providing structure and leadership to our culinary team, managing weekly and monthly P&L, ensuring food cost remains within acceptable margins, managing kitchen labor budget, scheduling staff, ongoing recipe development, providing training to line level culinary staff, quality assurance monitoring, and managing meal service periods to ensure customer satisfaction and high employee morale. The ideal candidate will have excellent organizational skills, be a flexible self-starter, be detail-oriented with the ability to multi-task in a fast-paced and ever-changing environment.
